When looking at my CC titles for review and proofing, I have to click a button that says “show more” - this is where it look like it’s “edited” my video. There are jumps in the video that weren’t there when I uploaded it.

Have you turned off any of the subtitle boxes (by clicking the little eyeball icon)? This effectively removes/edits that box from the video, so that would make it appear to jump as the player skips that part on playback.
If that isn’t it, if you wouldn’t mind linking me to the video in question and pointing out the timestamp where it skips I will hop right on it.
