I’m guessing this is nit-picky but is there a way to stop full stops being generated at the end of captions, automatically?
I find most of my time is removing them

Not nitpicky at all.
I am going to be adding a feature that will allow you to remove characters and words en masse so that will probably be the easiest solution in the short term. Long term, yeah I can see just adding a switch allowing you to choose whether you want any punctuation at all.
I should have this feature enabled this month.
